Scones

My very basic scones recipe. Makes about 12. Serve warm with jam and whipped or double cream, with a nice cup of tea. Yum!

1 1/2 cups self raising flour

3 tablespoons butter

1/2-1 cup milk

plain flour for dusting

Preheat oven to 200 deg C, lightly dust a lined baking tray with plain flour.

Sift SR flour into a bowl, and use your fingertips to rub the butter into the flour until the mixture looks like really fine breadcrumbs. Pour the milk into a well in the centre of the flour, and mix with a knife until it's a soft dough. Lay out on a lightly floured surface and knead very lightly (too much and it'll become tough!).

Take dough and form into round balls of about ping-pong ball shape, then place them on the tray and press down a little to flatten them. Sprinkle the tops with flour and put in the oven for 20-25 mins until golden. Turn out on a wire rack and serve warm!
